I have a solution for you, but the Go Power Heavy-Duty Modified Sine Wave Inverter - 1,000 Watts - 12V # 34280176 isn't what I would recommend for use with a refrigerator because it may potentially damage the unit. I also would go with a slightly higher rated inverter to make sure that enough power is available.

You are correct in that in order to power AC and DC units with shore power, you need a converter. The Progressive Dynamics Mighty Mini AC/DC Panel and Converter/Smart Charger - 45 Amp, part # PD4045KA, that you looked at is a good choice for this.
